When entering a new wine from a winery that you have previously entered, WineBanq will filter the list of Regions and Varieties to only display those that have been previously associated with that winery. This is to make it easier when selecting.

To see the full list of Varieties and Regions, just click the Refresh button. It is located immediately to the left of the Edit button. A tooltip is displayed if you hover your mouse over the button.
